These Rum Truffles are a delicious adult treat for the holiday season.
Good news about Rum Truffles is their versatility without losing any of their basic fudgey chocolate-rum flavor. Rum Truffles can be adapted in various ways: Nut-free or with your favorite nut-type. You can be creative in finishing your truffles with a variety of coatings: colorful sugar sprinkles, chocolate sprinkles, shredded coconut cocoa powder, icing sugar, or anything else you come up with.
No-bake, the alcohol stays in the truffle and should not be consumed by anybody who drives afterwards.
The variant I feature in this post is Rum Truffles with walnutchunks and grinded wafer biscuits and coated in cocoa powder and icing sugar.

Ingredients:
- 3 1/4 cups grinded wafer biscuits
- 3/4 cup icing sugar
- 1 1/2 cups walnut chunks
- 1/4 cup unsweetened cocoa powder
- 3 tbsp corn or agave syrup (I used light corn syrup)
- 1/2 cup dark rum
For the coating:
- Unsweetened cocoa powder
- Icing sugar
Instructions:
- Crush the wafer biscuits in a food processor to get your grinded wafers.
- In a large bowl, whisk grinded wafers, icing sugar, walnut chunks, cocoa powder.
- Stir in the syrup of your choice and the rum until you have a solid moist mass.
- Shape the mass into approx. 1 inch balls. Tip: Use food gloves to prevent the gooey mass from sticking to your hands. Rub some butter on your gloved hands; it prevents the mass from sticking to the gloves. The butter adds an additional flavor to the truffles.
- Roll the rum ball truffles in the coating of your choice. (I used cocoa powder and icing sugar).
- Place your rum truffles each in a paper baking cup, so that they do not stick together. (It is a useful tip when you create truffles with different coatings.)
- Stack the paper cups in an air-tight container and let them chill in the fridge for at least a day so that the ingredients can blend together and develop its full flavor. (They stay fresh up to a month when kept in the fridge.)
