Mixed Spinach Salad

Ingredients:

  • Spinach, coarsely chopped
  • Tomato, diced
  • English cucumber, diced
  • Celery stalk, sliced
  • Red onion, chopped
  • Feta cheese, diced
  • Kalamata olives

For the Dressing:

  • Freshly pressed lemon juice
  • Extra virgin cold-pressed olive oil
  • Fresh ground black pepper, to taste
  • Kosher salt, to taste

Instructions:

  1. Mix together all the vegetables, except for the Feta cheese.
  2. Top your salad with the Feta cheese.
  3. Drizzle with the dressing.

Enjoy!
